		<description>Well... there are a few things you can do to avoid a flat-headed cookie monster. The first option has to do with the recipe. Try using a recipe that uses baking powder and baking soda. Since they&#039;re both leavening agents, your cupcakes will rise extra-high! Also, be sure to stir your batter using a spatular and not an electric hand mixer. This keeps the batter light and fluffy and easy to rise. Use a light colored baking pan because dark pans may burn your cupcakes. Also, filling the cupcakes 3/4 of the way instead of 2/3, they will rise more and be rounder at the tops. Try cooking your cupcakes at 325 degrees... not the traditional 350 degrees. It takes a little longer so be sure to compensate for that, but the cakes will rise more. Lastly, try adding a scoop of meringue powder to your recipe. Meringue powder can be found at any specialty baking shop and is widely known for its ability to fluff up your cakes and other baked good. Hope this helps :)
