When God gives you lemons… make lemonade? No; make lemon cheesecake! With this particular lemon cheesecake recipe, you actually don’t even need lemons… so I guess when God gives you lemon pudding… well, you know what to do!
The best part about this tasty lemon cheesecake is how deliciously simple and quick it is! It’s perfect for moms on the go or just plain people with packed schedules!
In hardly no time at all, you will have created (and be able to enjoy) such a decadent dessert like lemon cheesecake. Sat so long to that 3 hour chilling time… say hello to cheesecake in under an hour!
Yield: 6 servings
Ingredients:
Crust:
1/3 cup confectioner’s sugar
1/2 cup butter; melted
1 1/2 cup graham cracker crumbs
Filling:
8 ounces cream cheese
1 package instant lemon pudding
2 cups milk
Directions:
1) Mix sugar; crumbs, and oleo. Bake as for crumb crust. Mix cream cheese until smooth. Gradually blend in 1/2 cup milk until smooth and creamy.
2) Add remaining milk and pudding mix. Beat slowly with egg beater for 1 minute. Do not overbeat. Pour into cooled crust. Chill.
It’s so easy, hardly anyone could do it! I made this lemon cheesecake recipe countless times, especially when my schedule was busy or the days were so nice, I couldn’t bear to stay inside for TOO long!
For a fun variation, try mixing up a simple strawberry glaze for the top or if you’re particularly daring try adding some slicing strawberries to your cheesecake! Easy Heart Healthy Fudge Recipe
Fudge is a decedent dessert and if you’re trying to eat healthy, then you can’t eat any.
Come on! Get real! I love fudge too much to cut it out of my life completely. With this recipe you don’t have to and in addition to the low calorie and fat count, this recipe also tackles another situation in nutrition—heart health.
I recently stumbled across an interesting health related site called The Health Hub and I found it extremely enlightening. There’s information on a ton of different topics, but the one I found most staggering was heart disease.
Heart disease is the nation’s number one killer and kills one person every 30 seconds, in the Unites States alone. There are things we can do to prevent it thought. Don’t be a statistic… because you don’t have to be.
Yield: 64 candies
Ingredients:
- 1 can (14 oz) sweetened condensed milk
- 1 bag (12 oz) semisweet chocolate chips (2 cups)
- 1 oz unsweetened baking chocolate, if desired
- 1 ½ cups chopped nuts, if desired (almonds and walnuts are especially good)
- 1 tsp vanilla
Directions:
1) Grease bottom and sides of 8-inch square pan with butter.
2) In 2-quart saucepan, heat milk, chocolate chips and unsweetened chocolate over low heat, stirring constantly, until chocolate is melted and mixture is smooth; remove from heat.
3) Quickly stir in nuts and vanilla. Spread in pan. Refrigerate for about 90 minutes or until firm. Cut into 1-inch squares. Enjoy!

Quick and Easy Brownie Recipe

Now days when is there time to bake; we need an easy brownie recipe for those of us on the go.
Family, work, school…My life can get very complicated sometimes. With so much going on it can seem like I never have time for the sweet things in life, but it doesn’t have to be that way.
This easy recipe will bring you back to the good ol’ days when you had a huge homemade brownie in one hand and a large glass of milk in the other. Plus, no matter how busy your life is…even you’ve got the time for this recipe!
I frequently make these brownies for my family and they’re a huge hit.
Do you have that neighborhood barbeque, family reunion or church dinner next weekend? Well, who’s got time to make a cake…or even cookies? You want something that taste scrumptious and is easy to make.
This easy brownie recipe is your ticket to a happy family and grateful recipients of your wonderful cooking!

Yield: 24 brownies
Ingredients:

1 ¼ cups (5 ounces) plain cake flour

½ teaspoon salt

¾ teaspoon baking powder

6 ounces unsweetened chocolate, chopped into fine pieces

12 tablespoons (1 ½ sticks) unsalted butter, cut into 6 pieces

2 ¼ cups (15 ¾ ounces) sugar
-
4 large eggs
-
1 tablespoon vanilla
-
1 cup pecans or walnuts, chopped and toasted (optional)
Directions:
2) Mix the flour, salt, and baking powder in a medium bowl until combined. Put it aside. You’ll need it later.
3) In a large heatproof bowl set over a saucepan of almost simmering water, melt the chocolate and butter together, stirring occasionally. If your schedule won’t allow for this task, don’t worry. You can also microwave the two together in a microwave safe bowl for 45 seconds, then stir, and heat for 30 more. That should do the trick. If it doesn’t, just continue heating in 15 second increments until the chocolate is smooth.
4) Once melted, mix the sugar into the chocolate mixture. Add eggs (one at a time) and mix well after each addition until combined. Mix in the vanilla.
5) Add the flour mixture gradually, folding in with a rubber spatula, until the batter is completely smooth.
6) Pour the batter into the prepared pan and if you decided to use pecans or walnuts, sprinkle them on top of the batter at this time.
7) Put the brownies in the oven and bake until an inserted toothpick comes out with just a few crumbs. It’s very important that you don’t bake them until the toothpick comes out clean or else your brownies will turn out cakey, dry, and over-baked. This step usually takes about 30-35 minutes.
8) Once they’re done, remove from the pan and let cool for up to 2 hours… but if you can’t wait that long then cooling for about 15 minutes will work too.
9) Then…my favorite part…cut into equal squares, remove your favorite piece from the pan…my family fights over the corner pieces… and… Enjoy!!
