For this Thanksgiving recipe, prepare a marinade of 20 to 30 separated cloves of unpeeled and garlic; a fresh jalapeno pepper, stem removed; juice of a lime; two cups warm water and a half teaspoon of salt. Then for the trip-tip and sauce, prepare a 2 and half pounds of tri-tip roast, the fat layer left on one side; eight ounces of fresh and sliced shitake mushrooms; olive oil; eight cloves of peeled and sliced garlic, finely chopped red onion, two cups of dry red wine; pepper and salt.
Place your marinade ingredients in a blender and mix until well blended. Put the meat marinade in a sealed plastic container or a plastic bag and leave the marinated meat in your fridge overnight. The following day, take it out from the refrigerator and while it stays in the container, allow it to go back to room temperature and preheat the oven at 500 degrees. Rub the roast with olive oil and lay on the roasting pan. Put half an inch of the marinade at the pan’s bottom and bake for 20 to 40 minutes or depending on the roast size.
